Preharvest Winemaking

Join Molly Kelly, enology extension educator, as we delve into the use of biocontrol agents from harvest through winemaking. We will discuss the use of non-Saccharomyces yeast that suppress acetic acid production of spoilage yeasts, acetic acid bacteria, and other bacteria during the pre-fermentative stages. Other non-Saccharomyces yeasts consume oxygen to protect aroma and color from oxidative damage and suppress the growth of spoilage bacteria that can result in volatile acidity.
EVENT DETAILS
During this three-hour in-person workshop, learn about the winemaking process with Extension Educator Molly Kelly. Attendees are encouraged to bring wines for group assessment and feedback. Lunch will be provided.

The use of these bioprotectants ensures that juice can be protected from microbial spoilage during clarification or short-term storage, allowing for minimized sulfur dioxide use. Chitosan products will also be discussed as microbial control agents to protect wine from acetic and lactic acid spoilage bacteria.
